For more than five years, LondonHouse Chicago has proudly partnered with Closed Loop Farms, a local producer whose greens and edible flowers have become as much a part of our menus as the skyline view from LH Rooftop.
This summer, Executive Chef Liz Sweeney and Executive Pastry Chef Thomas Gorzyca, stepped away from the kitchen to tour Closed Loop Farms' operation. They spent an afternoon with owner Adam Pollack, exploring their growing process and outdoor farm. It was a great reminder of why we choose local, and why this relationship matters to every guest who dines with us.
Closed Loop Farms operates with a simple, forward‑thinking philosophy: farming should nurture the environment while feeding the community. Their growing operation is designed to use minimal water, create zero unnecessary waste, and support a healthier food system.
Walking through the growing racks, Chef Sweeney and Chef Gorzyca paused over trays of microgreens thriving in organic potting soil. This method has proven to deliver more flavor and nutrition than traditional hydroponics. At Closed Loop Farms, the organic soil does the work, rich with the natural nutrients the greens need. There’s no synthetic fertilizer, no shortcuts.

Chef Gorzyca, whose pastries often balance delicate flavors with visual artistry, put it simply: “These flowers aren’t just decoration, they’re an ingredient. They change how a dish feels, how it tastes, even how someone remembers it.”
Closed Loop Farms’ name speaks to their mission. A “closed loop” means creating a system where resources are reused, waste is minimized, and the process continually feeds itself. On their farm, leftover plant material is composted back into the soil. Water is conserved. Energy use is carefully managed.
This approach creates a growing environment that is as thoughtful as the chefs who source from it. When our team walked through the farm with Adam Pollack, they saw a network of choices—each made to keep Chicago’s food system stronger and cleaner.
The team also makes all of their deliveries in reusable packaging. When they drop off deliveries they pick up the previous week's containers. This saves huge amount of plastic waste and highlights their whole-systems commitment to sustainability.
As we continue to serve guests from around the world, our partnership with Closed Loop Farms anchors us firmly in Chicago. It’s a reminder that the future of fine dining isn’t just about what’s plated in front of you—it’s about where it comes from and who grows it.
