Available only during brunch service on Saturdays and Sundays from 11:00 AM to 2:30 PM, this shareable showstopper is made for indulgent moments (and unforgettable photos).
Crafted by Executive Pastry Chef Thomas Gorczyca, this three-pound cinnamon roll is anything but ordinary. It starts with a Japanese milk bread dough made using a tangzhong starter. This is a technique where flour is gently cooked with milk to create a slurry. This step helps the dough absorb more liquid, keeping it incredibly soft, moist, and tender. Think the richness of a churro crossed with the fluffiness of a brioche.
The dough is rolled out to an impressive 4 feet long, then slathered with butter and layered with a cinnamon sugar blend made from dark brown sugar and not one, but two types of cinnamon — one spicy, one smooth. It’s then loosly coiled and baked in a 6-inch cake pan until perfectly golden.
When the Sky High Cinnamon Roll hits your table, it’s finished with a dramatic pour of 16 ounces of vanilla bean glaze, cascading down the sides. Rich and velvety, the glaze is infused with real vanilla bean for a flavor that’s every bit as indulgent as it looks.
