This Earth Day, we’re proud to spotlight a few of the exceptional local purveyors who help us bring conscious dining to life. From family-owned farms to circular food systems, these partnerships reflect our deep commitment to quality, community, and the planet.
This local, family-owned business leads the way in eco-conscious distribution. Testa Produce operates the only foodservice facility in the nation with LEED Platinum certification. Their innovative headquarters were designed to minimize carbon footprint and rely on renewable energy sources. By choosing Testa, we’re supporting not only top-tier produce, but an environmentally responsible supply chain.
Grown indoors just five miles from LondonHouse, Four Star Mushrooms redefines local agriculture with their temperature-controlled, regenerative growing model. By transforming upcycled organic waste into nutrient-rich “mushroom food,” they cultivate delicious hedgehog and chestnut mushrooms used in several new dishes on our menu (pictured below). After harvest, the substrate is converted into compost-ready soil, completing a truly closed-loop cycle.
Year-round, we source microgreens, pea shoots, and micro herbs from Closed Loop Farms — an urban farm rooted in the Back of the Yards neighborhood. Their greens are grown vertically indoors and, in warmer months, they supply our kitchen with seasonal lettuce and edible flowers. Their outdoor garden — built over a reclaimed parking lot — has evolved into a thriving urban ecosystem with bees, butterflies, and fresh produce. Their mission? To provide meaningful work for their community and nourishing food for all.
