Spring is here and so is the next special edition of our Afternoon Tea Service. Our Spring Tea is an explosion of color and flavor! This bright and delicious experience is served in Bridges Lobby Bar from March 31 through June 19, 2024 — with reservations available daily, from 12:00 pm to 3:00 pm.
The Spring Tea menu, thoughtfully curated by Executive Chef Elizabeth Sweeney and Executive Pastry Chef Thomas Gorczyca, celebrates the vibrant rebirth of spring both in presentation and palate. Choose from an exquisite selection of Rare Tea Cellars teas, each with its unique story and aroma, setting the tone for the journey of flavors to come.
Begin with our freshly baked pastry basket featuring the light zest of a Lemon Poppy Scone and the soothing sweetness of a Honey Chamomile Scone, each waiting to be topped with strawberry rosé preserves, tangy lemon curd, and rich clotted cream. Next comes the tea tower, a visual treat for the eyes, where confections like the Robin’s Egg Macaron, with its malted milk chocolate ganache, nestle among savory bites like the sophisticated Sushi Crepe, wrapped with beet-cured salmon and a dusting of everything spice.
The creativity of our culinary team shines in each crafted piece. The Carrot Cake Donut, with its vanilla bean glaze and carrot streusel, offers a playful twist on tradition. For a savory contrast, the Asparagus Tart, crowned with Boursin cheese and balsamic reduction, promises a rich melody of flavors.
